- The first thing we must do is wash and dry the salmon. Remember to remove the thorns if necessary. For the elaboration of our dish we can use the tail part or small loins. You choose the part of the fish you choose, they must be two pieces of equal size and shape. If you want to marinate the entire piece of whole salmon, it will be necessary to adjust the amount of marinade.
- For the elaboration of our marinade, we first mix salt and sugar in a deep container, ideally a bowl. We graze half a lemon and add it to the mixture. Then we throw some fresh dill branches previously chopped. Once we have our mixture, add a third at the base of our bowl and place one of the pieces of our salmon on top, with the skin down. We cover it with a few tablespoons of our marinade and place the remaining fish piece on top, with the skin up.
- Finally, we end up covering the entire plate with the remaining marinade, cover the bowl well with film or transparent paper and let it stand in the fridge for about 10-12 hours (remember to place some weight on the surface). Once the rest period has elapsed, we remove the film and wash the salmon loins with a little cold water, removing the marinade. We dry well with kitchen and touch paper, and lunch with a sharp knife. Once ready, you can choose between serving immediately or save the duck again in the fridge. If you decide to keep it, remember to spread it well in Extra Ayozar virgin olive oil so that it does not notice.
