Ingredients (for 4 people)
- 1 kg of ripe tomatoes (pear or branch type, very red and aromatic)
- 1 Italian green pepper
- 1/2 cucumber (if you prefer softer, péco it)
- 1/4 sweet onion
- 1 small garlic clip (without the germ)
- 50ml of our Aove Ayozar early premium
- 2 tablespoons of Jerez vinegar or white wine
- Salt to taste
- Cold water (optional, depending on the texture you want)
- Bread from the previous day (optional, to give it more body)
Step by step elaboration
- Wash all the vegetables well. Peel the cucumber if you do not like the strong taste and eliminate the garlic germ so that it does not repeat.
- Chop the ingredients in medium sizes. They do not need to be perfect, since we will crush everything in the end.
- Place the ingredients in a kitchen glass or kitchen robot. Start with the tomatoes, then the pepper, cucumber, onion and garlic. It also adds some salt, the vinegar and, if you want a thicker texture, a small piece of bread.
- Crush everything for several minutes, until a fine and homogeneous texture is obtained. If you like the very soft gazpacho, you can pass it through a strainer.
- Add early extra virgin olive oil little by little while you keep beating. This step is key: emulsifies the mixture and provides brightness, body and an exceptional flavor. This is where our oil shines with its own light.
- Adjust salt and texture. If you want a more liquid gazpacho, add some cold water or even some ice cubes.
- Let it rest in the fridge at least an hour. Served very cold, it is a delight.
