Although it is an American tradition, more and more households in Spain are taking advantage of the occasion to get together, give thanks for what they have experienced and enjoy a special meal in good company.
At Aceites Ayozar, we believe that there is no better way to celebrate than by sharing the flavors that unite us. That's why today we bring you a delicious, simple recipe with a very Mediterranean touch: Roasted turkey with aromatic herbs and Extra Ayozar virgin olive oil.

Ingredients (for 6-8 people)
For the turkey:
- 1 whole turkey of about 4-5 kg
- 200 ml of Ayozar Familiar Extra Virgin Olive Oil
- 1 lemon (juice and zest)
- 6 cloves of garlic
- 1 sprig of fresh rosemary
- 1 sprig of thyme
- 1 teaspoon of sweet paprika
- Salt and black pepper to taste
For the optional filling:
- 2 apples chopped
- 1 onion chopped
- 100 g day-old bread, cubed
- 50 ml of Ayozar
- 1 teaspoon cinnamon or nutmeg (optional)
To accompany:
- Roasted vegetables (carrots, squash, potatoes, onions)
- EVOO and lemon sauce
Step by step preparation
1. Prepare the marinade
In a bowl, mix the Ayozar Extra Virgin Olive Oil, the lemon juice and zest, the chopped garlic, rosemary, thyme, paprika, salt and pepper.
This marinade will be the key to the flavor: the EVOO helps the herbs release their aromas and penetrate the meat, providing an irresistible Mediterranean touch.
2. Dress the turkey
Clean the turkey well and dry it with kitchen paper. Spread the entire surface (outside and inside) with the marinade, making sure it is well coated.
If you can, let it sit in the refrigerator for a few hours—or overnight—so the flavor can intensify.
3. Prepare the filling (optional)
In a frying pan, add a splash of Ayozar EVOO and sauté the onion until golden. Add the apples and cubed bread, mix well and season with a touch of cinnamon or nutmeg.
Stuff the inside of the turkey with this mixture before placing it in the oven.
4. Bake with care
Preheat the oven to 180°C.
Place the turkey on a large tray, cover it with aluminum foil and bake it for about 2 and a half hours (about 30 minutes per kilo).
From time to time, open the oven and spray it with its own juice and a little more EVOO, so that the meat is tender and juicy.
In the last half hour, remove the aluminum foil so that the skin becomes golden brown and crispy.
5. Serve and enjoy
Take the turkey out of the oven, let it rest for a few minutes and accompany it with roasted vegetables and a light sauce made with the roast juice, a little EVOO and a few drops of lemon.
